Queromarca is located in Peru’s Cajamarca highlands. The combination of fertile volcanic soils and mountain air—at around 1,800 to 2,100 meters above sea level—gives this coffee its bright character. Cool nights slow the cherries’ ripening process, resulting in more complex, naturally sweet flavors.
Bourbon, Caturra, and Typica stand out in this region. Caturra offers lively acidity, Bourbon delivers a bit of extra sweetness and chocolate-like depth, and Typica contributes delicate floral hints. Together, these varietals produce a crisp, fruity cup with a smooth, light sweetness.
Local farmers predominantly use a fully washed process. Ripe cherries are handpicked, pulped, then fermented and rinsed thoroughly. This approach amplifies the clean, vivid notes in the cup, such as subtle apple or berry undertones, while keeping the overall profile balanced and fresh.
The hilly terrain supports small-scale farms. Families pick cherries by hand from March through September, ensuring only the ripest cherries make the cut. Natural fertilizers and shaded growing conditions help preserve plant health without the use of synthetic chemicals or pesticides.
Given the region’s humidity, many rely on raised drying beds or covered systems for even, consistent drying. This careful handling reduces defects and preserves the gentle, nuanced taste—smooth cocoa layers, mild fruitiness, and a pleasantly bright finish.
A light to medium roast highlights the coffee’s bright acidity and floral accents. Slow-brew methods like a V60 or Chemex bring out its clean profile, while gentle immersion methods create a richer body and cocoa-forward notes.
