30ML, from tiny bar to national chain
30ML began in 2011 on a narrow street in Utrecht, where Frans Kooijman and Wendy Berren-Kooijman quit their jobs and opened a small espresso nook. The low threshold, friendly atmosphere and solid espresso immediately attracted local residents and tourists alike.
Two years later a full café license followed on Mariastraat. There the concept grew at lightning speed. In 2017 the flagship store moved to the lively Vredenburgplein with more seating and a visible roastery.
Since 2018, 30ML has been a franchise model. The brand now counts about 19 locations, spread from Amsterdam to Venlo. Each shop combines the same core identity with a local accent, so regulars feel at home while new visitors still get the recognizable 30ML experience.
Control over every bean
An in-house roastery gives 30ML full control from bean to cup. Green coffee arrives in Utrecht, is tested, and only after cupping does a blend receive its final roast profile. That way every bag comes fresh from the drum and heads quickly to the cafés.
The roastmasters deliberately choose a medium-light roast. It lifts bright acidity, creamy body, and full sweetness without risking bitterness. Smaller batches – often daily – keep flavor differences minimal and ensure every espresso delivers the same quality.

All coffees are made from high-quality Arabicas. The core range includes house blends as well as standout single origins.

For home baristas, 30ML sells a sampler with three 200-gram bags. The selection shifts with the seasonal roster, so tasting fans can easily discover new regions and flavor profiles without a large investment.
Owner-baristas contribute ideas, for example a latte paired with a house-made wasabi-mayo toastie or a chai based on oat milk. Thanks to that bottom-up innovation, the menu stays lively and knowledge grows across the network.
Welcoming vibe and recognizable design
The number 30 in the brand name refers to the standard size of an espresso, 30 milliliters. That clever nod reinforces the coffee character even before the first sip.
Every shop feels like a second living room. Soft sofas, warm wood accents, and calm colors invite lingering. At the same time, all locations share the same clean packaging: a clear origin statement, tasting note, and the backpack-friendly 250-gram format.
Quality and responsible sourcing
30ML works exclusively with specialty-grade Arabicas with a high cupping score. Farmers receive a fair price and stay motivated to deliver quality. Purchasing is preferably done directly or via importers who guarantee traceability.
Every new shipment is inspected by the roasting team. Only after approval do the beans go into the roaster. That strict control keeps defects out of the bag and ensures every customer gets the same rich flavor experience.
Growth ambitions and future plans
The franchise model keeps expanding. In 2022 new branches opened in Zeist, Rotterdam Alexandrium and Venlo, Tilburg is on the roadmap. New entrepreneurs receive intensive support, from barista training to marketing, so service and branding remain consistent.
Besides coffee, 30ML is investing in an extensive brunch menu, fresh juices and a growing tea menu led by a certified tea sommelier. The team is also exploring bottled cold brew and subscription boxes, so aficionados can receive their favorite beans outside the cafés as well.
The essence remains unchanged, passion, quality and hospitality in every 30 milliliters of coffee.
