Colombia La Reserva comes from Bruselas, Pitalito in Huila, and grows at Finca La Reserva led by third-generation coffee farmer Marlon Rojas Pérez. This micro lot is lightly roasted at the Rum Baba roastery in Amsterdam, focused on filter coffee and maximum freshness. The taste is intensely fruity with notes of blueberry, blackberry and lime, a medium-high acidity and a silky mouthfeel, with floral hints in the finish. The beans are co-fermented with wild blackberries, then washed and dried for 15 days on raised beds. The lot is Pink Bourbon and Bourbon Amarillo, sustainably sourced, limited in availability and packed per 200 grams.

  • After this double fermentation, the beans are washed to remove all pulp.
  • Finally, the beans dry for about 15 days in the sun on raised African beds.
