A fresh take on Amsterdam coffee

Since 2014 White Label Coffee has shown how curiosity and boldness yield delicious coffee.
The brand started in a small corner shop in Amsterdam West and grew into three lively locations.
Today the company inspires both neighbourhood residents and the wider coffee industry.

Founders with diverse backgrounds

Physics student Francesco Grassotti and forensic psychologist Elmer Oomkens met at Espressofabriek.
Their shared passion for coffee led in 2014 to their own roastery and café on Jan Evertsenstraat.
Within five years new locations followed on the Overtoom and in Amsterdam North.
The name "White Label" stands for an empty label, ready to be filled with creativity and flavour.

Roast philosophy: omni and open

After two years White Label chose a omni-roast approach: one profile, suitable for filter and espresso.
This method preserves sweetness and clarity, while avoiding bitterness.
During preparation for Roast Masters one coffee was re-roasted seven times to find the perfect balance.
Roasting is done on reliable Giesen machines, with capacities ranging from six to fifteen kilograms.
Knowledge sharing is central; every Tuesday the cupping tables are open to visitors.

Signature coffees and limited releases

The range focuses on single origins from Rwanda, Guatemala, Colombia and beyond.
Each bean is given a profile that lets its origin speak clearly: bright, sweet, and aromatic.
Alongside steady favorites, the team regularly launches micro-lots and experiments.
One example is the fruity Guatemalan El Bejucal, beloved by The Coffeevine in 2019.
Espresso drinkers often sample two rotating options per day, sometimes as soon as only four kilograms have been produced.
For a clear overview of their approach:
- Rotation keeps the espresso grinder fresh.
- Micro-lots show new fermentations and processes.
- Blends are only created when a customer or competition asks for them.

Quality at every stage

"Quality all through the chain" is more than a slogan.
The team cups each batch weekly to monitor consistency.
Orders are dispatched daily at 16:00, as fresh as possible.
Collaboration with platforms like This Side Up ensures fair prices and traceability.
This creates a transparent line from farmer to barista.

Team of champions

Roasters Sebas Geistdorfer and Wouter Andeweg won the Roast Masters title in 2019.
Barista trainer Floris van der Burg already won the Dutch AeroPress Championship in 2015.
Thanks to this craftsmanship, guests are served competition-level coffee every day.
The atmosphere remains open, colleagues help one another and share recipes without being secretive.

Connection with the city

White Label organizes workshops, latte-art evenings and neighborhood festivals.
Collaborations with local bakers and the farm-to-table restaurant Spaanders demonstrate the brand's broad outlook.
The minimalist Scandinavian interior creates space for conversation and encounters.
Local residents see the cafés as accessible living rooms where something new can be learned every day.

Prospects full of experimentation and growth

The founders are considering new locations, provided that each place remains community-oriented.
Trips to Colombia and Rwanda should lead to broader coffee selections and deeper partnerships.
The team is also exploring new roasting software and fermentation methods to further refine flavors.
In addition, the online subscription service is growing, allowing White Label to serve fans worldwide.
Although the ambitions are high, the foundation remains simple: good beans, an open culture, crystal-clear flavor.
