Origin and farm
This coffee comes from the Minas Gerais region in Brazil. Serra Negra literally means "black mountain". The beans come from several small farms at around 1,200 meters altitude. They are purchased directly through importer Cafe Imports, which considers Serra Negra one of its signature Brazilian coffees.
Roast profile
The coffee is roasted to a medium-brown, without separate profiles for espresso or filter. White Label uses a single roast profile for all brewing methods, so the coffee's own characteristics are well preserved. The result is a balanced roast with a full, slightly chocolatey body.
Flavor and aroma
Dark chocolate tones dominate the aroma and flavor, with creamy nutty accents such as macadamia and pecan. There is also a subtle hint of citrus (a touch of orange). Additionally, sweet notes like roasted peanut, pecan and caramel- or praline-like touches come forward. Some also recognize the gentle taste of cocoa and ripe fruit on the finish.
Processing Method
The coffee was produced using the natural process. That means the red coffee cherries are removed from their stems and dried with the pulp intact in the sun or on patios. This method yields a creamy, sweet body and a mild fruitiness in the flavor, characteristic of many Brazilian naturals.
Variety and species
Serra Negra is 100% Arabica and consists of a blend of common Brazilian varieties: Bourbon, Catimor and Maracaturra. This cultivar combination gives the coffee its sweet, full flavor and good body.
Sustainability and ethics
White Label uses only single-origin coffees and no blends. The company promotes sustainability: in its own shops coffee can be taken away in reusable storage containers ('fluffies', refundable deposit €2.50) instead of the disposable bag (price €0.50). Importer Cafe Imports emphasizes long-term relationships with farmers and quality. No specific certifications such as Fairtrade or organic are listed for this coffee.
Brewing Recommendations
For filter coffee White Label recommends a ratio of 6 grams of coffee per 100 ml of water, while for espresso 18–20 grams of coffee for 35–45 ml of espresso (in about 25–32 seconds) is recommended. Serra Negra also performs well in a French Press or with other brewing methods (Chemex, V60, etc.); the soft, chocolate-rich and fruity tones are versatile and show nicely across different brews.
Reviews and prices
Mill City Roasters rates the coffee with a cupping score of 81/100. This lot has not won any known coffee competitions, but it has been a reliable staple for importers for years. Cafe Imports regards it as one of their 'signature' Brazilian coffees because of its dependable quality.
Packaging
The packaging is very minimalist: a simple white bag with a black-and-white label in the distinctive White Label design. A surcharge of €0.50 per bag is charged for the disposable packaging (there is no deposit, unlike the reusable 'fluffies' which carry a €2.50 deposit). The bag closes with a simple clip, which contributes to the sleek appearance.
Availability and price
Serra Negra is available through the White Label Coffee webshop and their shops (mainly in the Netherlands and the EU). A 250-gram package costs €11.25. When ordering 1 kilogram, a 10% discount is applied automatically (which amounts to roughly €40.50/kg). White Label ships orders daily within the EU.
