Brasil Capricornio is a dark-roasted 100 percent Arabica from southern Brazil, sourced from the Capricornio cooperative led by Luiz Saldanha. The beans grow at 450 to 1200 metres and are Rainforest Alliance certified. The honey process preserves natural sugars, with sun-drying on patios. In the cup there are flavours of chocolate, hazelnut, pecan and caramel, with low acidity, a creamy body and no bitter aftertaste. Suitable for espresso and moka pot, but also great for filter and French press with an adjusted grind. Zwarte Roes buys directly from the farmer, focusing on sustainability. Specialty score 84.5 and available in 250 g and 1 kg.

More About Brasil Capricornio

Origin and farm

  • Grown in southern Brazil (Paraná and São Paulo).
  • This coffee comes from the Capricornio cooperative (approx. 20 farms) under the leadership of Luiz Saldanha.
  • The area was historically important for coffee; after years of stagnation the plantations are being revived due to a changing climate.
  • Grows at about 450–1200 meters altitude, which gives slow ripening and a deeper flavor profile.
  • Originating from a Rainforest Alliance-certified farm that is committed to sustainability.

Roast Profile

  • Dark, espresso-like roast profile for a full body.
  • Low acidity and a creamy, sweet finish.
  • Rich flavors of chocolate and nuts are well preserved.
  • Does not develop a bitter aftertaste and provides a mild, smooth character.
  • Specifically roasted for espresso and Moka pot (fine grind).

Flavor and aroma

  • Aroma and flavor with nuts and chocolate: hazelnut, pecan, and dark chocolate.
  • Also caramel and sweet fruit notes (dark cherry) are present.
  • Very low bitterness and a round, creamy body.
  • Described as 'round, chocolatey flavor' without a burnt aftertaste.
  • Accessible, classic profile that also appeals to traditional coffee drinkers.

Processing Method

  • Capricornio uses a semi-washed (honey) processing method.
  • Cherries are partially pulped and then dried, allowing the bean to retain much of its natural sugars.
  • No extra water is added for fermentation (as in fully washed).
  • The coffee is traditionally and slowly sun-dried (patio drying) on the farm.
  • This method produces a rich, sweet, and smooth flavor profile without chemical additives.

Variety and species

  • 100% Arabica coffee (no Robusta).
  • Made from Brazilian Arabica varieties: Yellow Catuai, Mundo Novo and Obatã.
  • Bourbon and Catuai varieties are also present in Capricornio.
  • A mix of Arabica genetics; the source calls it 'mixed variety'.
  • These varieties contribute to the coffee's mild, balanced character.

Sustainability and ethics

  • Direct Trade: Zwarte Roes buys these beans directly from the farmers.
  • Capricornio supports ecological farming with soil-enriching crops and organic fertilizers.
  • The farmers use water-saving systems and wastewater treatment to reduce the environmental footprint.
  • The farm is Rainforest Alliance-certified, which guarantees long-term sustainability.
  • Packaging is 100% recyclable and environmentally friendly.

Brewing Recommendations

  • Espresso: use a fine grind for a full extraction.
  • Moka pot/Percolator: also a fine grind, produces a strong, creamy cup of coffee.
  • Filter (V60, Chemex, Aeropress): medium-coarse grind, longer contact with hot water.
  • French press/Cold Brew: coarse grind, long brew time for subtle extraction.
  • Grind the beans just before use for the best taste and aroma.

Prices and reviews

  • Was rated 84.5 points by the Specialty Coffee Association (high specialty score).
  • The coffee falls into 'Specialty Grade', top 5% of all coffee in terms of quality.
  • Farmers in Capricornio (Fazenda California) have won Cup of Excellence awards in Brazil.
  • Luiz Saldanha, founder of Capricornio, is a CQI Q-grader (internationally recognized cup specialist).
  • Fazenda California was the first coffee plantation in Paraná with UTZ and Rainforest Alliance certification.
