Origin and estate

The coffee comes from Hopong in Shan State (Myanmar), a mountainous region at roughly 1100–1600 meters altitude. The beans are sourced from a cooperative called Three Khuns Village, consisting of dozens of small family farmers from the Pa-O community who grow specialty coffee together. Until recently many farmers cultivated opium (poppy); in 2018 they switched to coffee. This step created a legal and sustainable income for the village. Hopong is positioning itself as a new player in the world of quality coffee.

Roast profile

Borgman & Borgman roasts this coffee in small batches in Leiden, using a slow roast at a low temperature. The beans receive a light to medium roast, tailored to filter coffee to preserve delicate flavors. The slow roast develops natural sweetness and minimizes bitter notes. The roast profile results in a balanced cup, full of flavor yet clear and lively.

Flavor and aroma

This coffee pampers the senses with a rich combination of flavors and aromas. Expect notes of chocolate and sweet plum, complemented by a fresh hint of blueberry. Processing Method

This coffee is processed using the natural method (natural process): after picking, the coffee cherries dry whole in the sun on raised beds, with only the ripest cherries used. Drying takes about two weeks; during that time the fruit pulp lightly ferments on the bean. Thanks to this slow drying, sweet fruit juices seep into the beans, yielding pronounced fruity, almost wine-like flavors. The natural approach produces a complex coffee with a full body and intense aroma.

Variety

This coffee is 100% Arabica and comprises a mix of classic and modern varieties. Among the cultivars are Bourbon, Catuai and Caturra, known for their sweet, aromatic profile. Catimor and S-795 are also part of the mix; these are disease-resistant yet deliver good flavor as well. The diversity of varieties adds extra complexity to the coffee’s taste, as each cultivar contributes its own nuance.

Sustainability and ethics

More than 100 farming families in Hopong now earn a sustainable, legal income from coffee cultivation. Through direct trade, producers receive a fair price for their beans, about 30% higher than the local market value. Their hard work is well rewarded. The coffee is also grown in an environmentally friendly way: under shade trees in a biodiverse system and with minimal use of chemicals. Farmers receive training in sustainable agricultural techniques so that production remains resilient for the future.

Brewing Recommendations

  • Prefer filter methods such as V60, Chemex or Aeropress for a clean cup.
  • Grind the beans medium-coarse just before brewing; freshly ground coffee delivers the most aroma.
  • Maintain a ratio of about 1:16 (e.g., 15 grams of coffee to 240 ml of water) for a balanced taste.
  • Pour water at approximately 92°C and let the coffee bloom for 30 seconds first to allow carbon dioxide to escape.

Awards and reviews

This Myanmar coffee is a specialty coffee and scores highly in quality evaluations. In cuppings it achieves around 88 out of 100 points—exceptional, since any coffee above 85 points is considered specialty. In 2018 a coffee from the Hopong region won first prize at the national Myanmar Coffee Competition. Both experts and customers praise this coffee’s complex, versatile flavor.
