Little Roastery positions itself as a local, sustainable roastery with ambitions for growth. Origins and Growth
The origin lies in a visit to a small plantation near Salento in Colombia. Back home, this led to experimenting with green beans in a pan, followed by the first roaster, “Gloria”. The transition from hobby to business began in an old barn at Boerderij De Riet in Leusden. When that space became too small, the roastery moved to Amersfoort. Local media reported as early as September 2022 on the opening of the roastery-café function, after which the premises officially opened on October 8, 2022. In the early years, Maud Struyk frequently appeared in communications and roastery work.
Roast philosophy and quality assurance
The roastery employs a “slow roasted” approach, meaning lower temperatures and small batches. This method is intended to emphasize the character of the origin. Profiles are developed incrementally, with cycles of roasting, cupping, and adjusting until the sweet spot is reached. Quality control and cuppings are fixed parts of the production day. Recipe development and internal training are part of the process, as also evidenced by the responsibilities in the 2025 role for Head Roaster.
Location, Opening Hours, and Equipment
The roastery and retail counter are located at Havenweg 14, 3812 PR Amersfoort. Opening hours are Monday through Friday from 09:00 to 17:00. Guests are welcome to pick up beans and receive expert advice during these hours.
The production floor is fully equipped for consistent batch roasting and sample development.

Assortment, blends, and single origins
The assortment combines permanent favorites with seasonal lots. “Nº1 Brazil“ stands as the first coffee and a lasting bestseller. “KEISTAD KOFFIE“ is an exclusive blend with chocolate and nutty notes, developed in honor of Amersfoort as the “European City of the Year”. The single-origin selection rotates with origin-specific roast profiles.

Origin and Partnerships
Transparency regarding altitude and processing helps set flavor expectations. Nicaragua “Nº12 Santiago” is sourced via the PRODECOOP cooperative in Estelí, washed process, grown at 1,200–1,700 meters. Peru “Nº10 Junín” is washed and grown at 1,200–1,600 meters. The Yirgacheffe lot from Ethiopia comes from small-scale gardens, washed, at 1,800–2,000 meters. The organization expresses its ambition to source more directly and build long-term relationships with farmers and importers.
Sustainability and Community
Sustainable choices are evident in logistics, waste reduction, and local community involvement. The roastery participates in Too Good To Go to sell surplus stock meaningfully. Bicycle delivery within Amersfoort and up to 10 kilometers beyond reduces emissions whenever possible. The “Buitenboontjes” product utilizes test batches or non-standard but high-quality beans. In 2021, the roastery donated freshly roasted coffee to the Voedselbank Amersfoort. The company states that farmers are paid fairly within the office program.
