From Melbourne to Amsterdam

Founder Patrick Abbott lived in Melbourne for twenty-five years, learned to perfect coffee there, and brought that culture to the Netherlands.
Together with partner Margriet van Tuyll he opened Monks in a former ice-cream shop on Bilderdijkstraat.
The name Monks refers to Patrick's nickname "Monk", giving the brand an immediate personal touch.
Initially Monks had the beans contract-roasted by Bocca, but soon their own Probat drum roaster arrived.
Within weeks Monks was featured in Het Parool as a top workplace thanks to fast Wi-Fi and the large communal table.

Roasting technique and sustainability

Monks roasts in small batches on a twelve-kilo Probat, so each origin retains its character clearly.

The roastery uses only compostable or recyclable materials; plastic was removed from the workflow from day one.
