This Single Origin from Cerrado Mineiro comes from Fazenda Nossa Senhora de Fátima, an organic and Fairtrade-certified estate. The medium-light roast preserves the natural flavors, with aromas of orange, caramel and almond, a creamy body and mild acidity. The coffee is natural processed, with the cherries dried in the sun for extra sweetness and a nutty finish. The beans are 100 percent Arabica from varieties such as Mundo Novo, Catuaí and Bourbon. Origin and farm

This coffee comes from Fazenda Nossa Senhora de Fátima in Triângulo Mineiro, part of the Cerrado Mineiro region (Minas Gerais, Brazil). Cerrado Mineiro is known for its fertile reddish-brown soils and mountainous climate (about 900–1,250 m). Farmer Ricardo Resende’s third-generation estate covers 395 hectares, 235 ha of which are planted with coffee. Annual rainfall during the harvest period is roughly 1,500 mm. In 2005 Cerrado Mineiro became the first Brazilian region to receive official Protected Geographical Indication (PGI) status, recognising its quality.

Roast profile

The beans are medium-light roasted (American roast). During this roast the temperature is kept around 210 °C, just after first crack. The result is a light-brown, oil-free bean with full body and mild acidity. This gentle roast preserves the coffee’s natural flavours, such as citrus and nut aromas. Noord Coffee Roasters roast the coffee fresh every week in-house at their roastery on the Noordkade in Veghel.

Flavor and aroma

The Single Origin Brazilië is powerful and complex. The coffee displays pronounced aromas of orange, caramel and almond. On the palate it is creamy and full-bodied with a gentle acidity. The medium-light roast adds a warm sweetness and a slightly nutty aftertaste. With a cup score well above 83 (specialty level) and a strength rating of 5/5, it delivers a remarkably intense yet balanced cup.

Processing Method

This coffee is processed using the natural (dry) method. The freshly picked coffee cherries are dried in the sun with their pulp intact for up to 3–4 weeks. This is the dominant method in Brazil, especially in Cerrado. The extended sun-drying caramelises the sugars in the fruit, resulting in extra-sweet, fruity flavours and a creamy body. The cup therefore shows a gentle profile with nutty notes and a hint of citrus. Worldwide it is estimated that more than 85% of Brazil’s coffee is processed this way.

Variety and species

The beans are 100% Coffea arabica, the premium species for specialty coffees. In Cerrado mainly Arabica varieties are grown, such as Mundo Novo, Catuaí and Bourbon (the estate also cultivates Icatu and Acaia). These cultivars typically deliver a sweet, well-balanced flavour. There is no Robusta in this blend; the moderate climate and altitude (about 950–1000 m) are ideal for Arabica. The selected varieties contribute to the mild, nutty notes and solid body.

Sustainability and ethics

Fazenda Nossa Senhora de Fátima follows strict sustainability standards. The estate is fully certified organic (USDA Organic/BCS-OKO) and, in 2012, became Brazil’s first Fairtrade Organic coffee farm. It also holds Rainforest Alliance and UTZ certifications. The farm invests in conservation, replanting native trees and using solar energy and biogas. Workers receive extra support: housing, transport and medical care are provided through Fairtrade projects.

Brewing suggestions

Brazilië Single Origin shines with several brewing methods. For example:
  • Filter (pour-over): use about 60 g of ground coffee per litre of water (ratio ~1:16). Brew with hot water (92–94 °C) and allow 3–4 minutes of draw-down. This brings out the bright citrus notes beautifully.
  • Espresso: dose roughly 18–20 g for a double espresso (yield ~36–40 ml) with a 25–30 second extraction. The full body and caramel flavours create a balanced, creamy espresso.
  • French Press: Use 1 part coarsely ground coffee to 12 parts water. Let it steep for 4 minutes for a rich, full mouthfeel. This accentuates the chocolate and nut flavors.
  • AeroPress: Experiment with a ratio of about 1:15 and a brew time of 2–3 minutes. This yields a complex cup with both fruity and sweet notes.
With these brewing methods, the unique flavor of the Brazilië Single Origin shines through best.

Prices and accolades

This coffee is specialty grade (cup score > 83). Coffees from Cerrado Mineiro often achieve high ratings: in 2024 a Cerrado arabica scored 91.93/100 in the Brazilian Cup of Excellence. Since 2005, Cerrado Mineiro has held a protected geographic indication (PGI) for coffee, the first region in Brazil to do so. The label guarantees origin and quality. Noord Coffee Roasters is also recognized for its sustainable practices; in 2025 the brand was cited as a frontrunner in sustainable coffee.

Packaging design

The coffee comes in a 500 g kraft paper bag with a resealable strip. The design is simple and artisanal: a natural-colored bag with a light label. At the top there is a line drawing of the Veghel Noordkade, followed by “Brazilië” in capital letters. The flavor notes (orange, caramel, almond) and the “5+1 free” promotion appear on the front, with the Noord Coffee Roasters logo at the bottom. The reverse features English text about the artisanal brewing process and origin. The sober, natural look underscores the brand’s sustainable approach.

Availability and price

The Brazilië Single Origin is available as whole beans or ground coffee (espresso or filter grind). Packaging options include 500 g and 1 kg bags, as well as bundles (e.g., 4×1 kg or 6×1 kg with 1 kg free). The recommended price is €17.86 for 500 g (promotion price) and €29.50 for 1 kg. For larger orders the price drops: 6 kg costs €147.50 (about €24.60 per kg). The coffee is sold through the Noord web shop and various specialty stores. Because it is popular, it may be temporarily sold out when demand is high.
