More About Ripsnorter Coffee

Ripsnorter Coffee, Rotterdam micro-roastery with competitive roots and a clear flavor mission

In Rotterdam, Ripsnorter Coffee grew from a competitive barista culture into a brand with its own tasting room at Mariniersweg 65. Founder Zjevaun Janga, multiple-time Dutch Barista Champion and 2024 WBC finalist, built the brand alongside partner Loes Beljaars after years at Harvest Caf‟ & Bakery. The story is about building bridges from grower to drinker, through curious sourcing and transparent roasting.

Origins and team

The roastery started in 2022 at a friend’s facility in Rotterdam and moved to its own location within about six months. The bar serves as a public tasting room and a brand anchor. Alongside Janga, coach and regular collaborator Wai Ho “Chris” Kwong plays a role in the competition and development work. Beljaars remains connected through the broader Harvest ecosystem.

Roast philosophy and menu

The flavor goals are “sweet, vibrant, balanced”, with an emphasis on clarity and origin. The menu rotates frequently, ranging from classic washed lots to wild experimental fermentations. For selected lots, the team uses OMNI roasts that work as both filter and espresso. The seasonal espresso is developed in reverse: first the desired flavor profile is determined, followed by blind cupping to source the matching coffees.

Assortment, blends, and signature flavors

The line combines a seasonal espresso blend with distinct single origins. The goal is versatility without ego at the bar, featuring careful recipes and clear tasting notes for both professionals and enthusiasts.

“DELIRIOUS | ESPRESSO”, designed for straight or with milk, featuring milk chocolate, pecan, and orange marmalade, with the recipe updated per season.
Inmaculada Signature | Natural Gesha from Colombia, from the Holguín family in Pichindé, near Farallones National Park.
Aroma Nativo | Aji Hydro Honey, a double-fermented honey on rare Aji, positioned as OMNI.
Recent single-producer features include Finca Las Flores by Jhoan Vergara in Huila, featuring detailed processing notes per lot.

Sourcing model and partnerships

Ripsnorter works with renowned producers and projects across multiple countries. Product pages provide details on the producer, variety, and process, including double-fermented honey and experimental anaerobic methods. The brand message emphasizes direct collaboration and actively bridging the gap between origin and cup.

Colombia, Aroma Nativo/Veci Project, Inmaculada, La Divisa, Edinson Argote and Alexander Vargas.
Panama, Janson.
Peru, El Pedregal.

Equipment and production capacity

The roastery operates a Giesen W6 drum roaster with six kilos per batch and a capacity of up to 24 kilos per hour. For small or experimental batches, the team uses a Stronghold S7 Pro with batch sizes ranging from 150 to 850 grams. The bar is equipped with a La Marzocco espresso machine, aligning with their focus on consistent service and recipe development.

Retail, bar and community

The Ripsnorter Coffee Bar at Mariniersweg 65 is open Wednesday through Monday, 08:00 to 16:00, and is closed on Tuesdays. The location serves as a tasting hub and hosts watch parties for the World Barista Championship as well as cuppings. The brand appears in guides and is part of the Rotterdam network, with Harvest Café & Bakery serving as an additional touchpoint.

Awards and visibility

Founder Zjevaun Janga won the Dutch Barista Championships in 2012, 2024, and 2025. During the 2024 World Barista Championship in Busan, he reached the finals and finished seventh. Profiles and interviews in trade media strengthen the visibility of the team and the roastery’s philosophy.

Sustainability and Transparency

A public annual transparency or pricing report and a separate sustainability section on the site are not available as of October 2025. Individual producer pages do provide context, such as the preservation of pristine forest alongside coffee plots at Inmaculada. Operational choices are primarily reflected through lot information and processing explanations.

Distribution, wholesale and collaborations

The webshop ships worldwide, with options for Europe and markets such as Japan, the UAE, the United States, Singapore, and South Korea. For business clients, there is a dedicated wholesale portal featuring the “Bloody Ripper Collection”. The brand appears as a guest roaster and featured at The Coffeevine in October 2024.

What this means for the Dutch professional coffee sector

Ripsnorter blends competition-level expertise with a practical focus on the bar, which is highly relevant for cafés seeking clarity in both flavor and service. The combination of OMNI roasts, seasonal espresso, and experimental fermentations offers flexibility for both espresso bars and filter programs’s. The Giesen W6 and the Stronghold S7 Pro enable consistent production, while small sample roasts accelerate innovation. For buyers, the name-driven sourcing is key, supporting traceability and distinctive flavor experiences at the bar.
