Rojas Specialty Coffee brings a Colombian family legacy directly to the Netherlands. The roots lie in Huila and date back to the beginning of the twentieth century. Salomon Perdomo Alarcón took the first steps. Later, two farms were merged through the marriage of Hugo Perdomo and Luz Divia Rojas. In 1964, Señor Perdomo was recognized as the first certified specialty coffee farmer in Huila. That moment anchored a clear focus on quality.

The idea for a Dutch branch emerged in 2019, following a family visit by Carlos Andrés Perdomo Rojas. His extended stay led to a direct-trade model without intermediaries. The launch was highlighted locally in June and July 2025 as a “farm to cup” story. The promise is simple traceability from farmer to cup.

Ownership, Team, and Locations

The Dutch operation is represented by Carlos Andrés Perdomo Rojas, Corine Blom, and Marco Blom. In Colombia, the Perdomo Rojas and Rojas Zuñiga families work on their own farms. There are two coffee bars in La Plata, Huila. The first Dutch coffee bar is located in Zwolle.

San Isidro is managed by the Perdomo Rojas family, while Palo Grande belongs to the Rojas Zuñiga family. For the Netherlands, 70 kg bags are offered, with approximately 20,000 kg available per harvest. Stock is held in the Netherlands, and samples are available upon request.

Products and Flavor Profiles

San Isidro is a single-estate coffee with an SCA score of 86. Its flavor profile features intense chocolate, caramel, and yellow fruits. It is roasted as a medium omni roast, available in 250g and 1kg packaging. Palo Grande is a single-estate coffee with an SCA score of 87, featuring notes of watermelon, winey tones, and cocoa. This is also a medium omni roast and comes in the same packaging sizes.

In-store, the retail assortment is often presented as two variants: a "blue, friendly" coffee and a "red, funky" variant with a longer fermentation process. Both refer back to the two fincas.

Processing and Agronomy

San Isidro utilizes a honey process with a sun-dried finish. The cherries undergo 12 hours of in-cherry fermentation, followed by 80 hours in an anaerobic tank. The varieties include Castillo, Colombia, and Bourbon. Palo Grande follows a similar path with honey processing and sun-drying, but with a 30-hour in-cherry phase plus 80 hours in an anaerobic tank. The varieties here are Colombia, Castillo, and Tabi.

The farms employ shaded agroforestry, utilizing natural water sources and circular, low-impact practices. This ensures consistent quality and stable deliveries.

Capacity and Bar Experience

For wholesale, the company communicates a capacity of approximately 20 tons of green coffee per harvest. In Zwolle, the bar serves espresso and filter coffee, alongside cold brew and breakfast options. Details regarding the specific roaster model, software, and batch size are not publicly available.

Local media in Zwolle highlighted the opening and the concept throughout June and July 2025. The business was officially registered on April 16, 2025.
