More About Trio Gesha

Trio Gesha by Keppler Koffie

Origin and estate

Trio Gesha contains three exceptional coffees from as many origins. From Panama come two renowned Geisha estates: Finca La Mula and Los LajonesThe third coffee is from Ethiopia, from the prestigious Gesha Village estate.
La Mula is located at approximately 1700–1800 meters altitude on the Barú volcano in Panama and is owned by coffee producer Willem Boot. Los Lajones reaches up to about 2100 meters on the same mountain and is owned by Graciano Cruz. Gesha Village is located in the Bench Maji region of Ethiopia at roughly 1900–2100 meters altitude; it was established in 2011 by Rachel Samuel and Adam Overton close to the original Gesha forests.

Roast and profile

These coffee beans are intentionally lightly roasted. filter coffeeA mild roast preserves the refined flavors and aromas of the Geisha varietal. A light filter roast emphasizes fruity notes, floral accents and bright acidity. Keppler Koffie tailored the roast profile to slow-coffee brewing methods so the complexity of each coffee comes through.

Flavor and aroma

Gesha is known for a pronounced floral and fruity flavor profile. In Trio Gesha, tasting notes include hints of juicy stone fruit (white peach) and berries (raspberry), framed by an elegant sweetness of chocolate or caramel. The aromatic experience is unique: jasmine blossom and tea-like nuances.
La Mula Geisha for example, evokes aromas of blackcurrant, tropical fruit and jasmine, with layers of caramel and black tea in the finish. The Ethiopian Gesha Village (washed) offers, on the other hand, subtle hints of white peach and raspberry and a clean, light finish with a touch of milk chocolate.

Processing Method

The Panama coffees (La Mula and Los Lajones) undergo a natural process: the cherries are sun-dried whole on beds. At Finca La Mula this drying takes about 22–27 days. The Ethiopian Gesha Village coffee, on the other hand, is washed processed: after depulping the beans were fermented with water and washed. This method yields a clear, refined flavor profile and accentuates the bright fruit notes.

Coffee variety

Gesha (Geisha) is the rare Arabica variety that all three of these coffees share. This coffee variety originates from Ethiopia but only gained worldwide fame in Panama. In 2004 Hacienda La Esmeralda discovered Geisha's exceptional potential during a cupping, after which this variety conquered the specialty coffee world. Since then Geisha has been known for its floral aromas, complex fruit flavors, and very high quality.

Sustainability and ethics

Sustainability is central to the origin of these coffees. Los Lajones was the first organic coffee farm in Panama and processes all of its coffee waterlessly (only natural and honey processes). Both Panamanian farms also keep a large part of their land as forest, which benefits biodiversity. In Ethiopia Gesha Village applies a similar approach: about 2,000 coffee trees per hectare grow among tens of thousands of shade trees, so coffee cultivation and nature conservation are in balance.

Brewing Recommendations

This exclusive coffee calls for careful preparation. A few tips to get the best out of Trio Gesha:
  • Preferably brew as filter coffee (e.g. with a V60 dripper, AeroPress or French press) for the cleanest result.
  • Use a ratio of about 6 g coffee per 100 ml water (1:16) for a balanced cup.
  • Grind the beans fresh to a medium grind (slightly coarser than espresso).
  • Use water at 92–94 °C; allow boiled water to cool slightly to avoid burning the flavors.
  • Preferably enjoy this coffee black Without milk or sugar, the nuances are best appreciated.
