A New Player in the Dutch Coffee Scene
At the beginning of 2025, the Netherlands welcomed a striking new coffee roastery. Mellow Coffee Roasters B.V. established itself in the Schiehavenhallen in Rotterdam. From June 2025, the company began to take shape. This was followed by a soft launch in October and a successful launch weekend in February 2026. The team consists of four founders: Vicky, Michael, Andy, and Min. They have diverse professional backgrounds in law, medicine, economics, and media.
Their joint mission is very clearly formulated. They want to break the poor reputation of Asian coffee in Europe. The roastery wants to demonstrate that these beans possess a special nuance and depth. Mellow is also operationally linked to Fufu Coffee Studio in Utrecht. This is a sister company where customers can easily pick up their online orders.
Precision and Technology in the Roasting Process
Mellow explicitly describes itself as a micro-roastery. The focus lies on small batches and exceptional origins. Sustainability and technology play a central role in their production approach. For their standard assortment, the roastery uses a ROEST P3000. For exclusive competition coffees, they deploy a ROEST L100. This separation guarantees maximum control over complex flavor profiles.
The company roasts coffee exclusively to order to ensure quality. Orders received before Sunday are shipped weekly on Monday. This logistical model ensures absolute freshness for consumers in the Netherlands, Belgium, France, Germany, and the United Kingdom.
Assortment Structure
The online offering consists of eighteen different coffees in total. These are clearly divided into four specific lines:
Mellow Daily: Seven accessible and balanced coffees for daily enjoyment.
Mellow Experimental: Three coffees where innovative processing methods take center stage.
Mellow Gem: Four rare microlots with unique and complex flavor profiles.
Mellow Competition: Three ultra-premium coffees for the most demanding standards.
Packaging sizes vary significantly. Consumers can choose from one-kilogram bags, standard 200-gram packs, or small 15-gram portions for competition coffees. The ‘Mellow Signature Blend’ serves as the flagship for espresso. This blend contains beans from the Sidama Bensa region in Ethiopia, Huehuetenango in Guatemala, and Yunnan in China. The addition of Chinese beans is a conscious nod to the founders’ roots. It results in an elegant flavor profile with notes of red fruits, chocolate, nuts, and cherry.
Transparency in Origin and Processing
The roastery employs a strikingly transparent approach to sourcing. Mellow clearly lists the names of farms and producers. Well-known partners include Nestor Lasso of El Diviso, Wilder Lazo of La Dinastía, and Lao Wang of Red Dragon Estate. Their selection covers various origins, including Colombia, Kenya, Panama, and China. In doing so, the company successfully balances underrepresented origins with prestigious producers such as Finca Sophia.
What stands out is the detailed information regarding processing methods. Mellow shares hard, technical data with the consumer. For instance, they specify a sugar content of 16-17 °Brix for the TianHao Estate. For Finca La Milán, they describe a 72-hour fermentation process, where the producer uses yeast, fermented pineapple, and coconut oil. Another example is the addition of mango cultures at El Renacer. This demonstrates that the roastery fully embraces modern fermentation profiles.
Education and Competition Success
Mellow Coffee Roasters is stepping directly into the spotlight within the Dutch coffee sector. Co-founder Vicky Cheng won the Dutch Cup Tasters Championship in early 2026. She will represent the Netherlands at the World Championship in Bangkok in May 2026. Additionally, the company is an official exhibitor at The Amsterdam Coffee Festival in April 2026. Their Finca Sophia Geisha is even being actively sold as a finalists’ coffee for the Dutch Brewers Cup.
Despite this strong focus on the high-end segment, the tone toward the consumer remains very accessible. The website offers extensive and practical brewing guides. Customers receive clear advice on extraction times, ratio’s, and specific grind settings for popular grinders such as the EK43S and the Comandante C40. Mellow recommends letting the coffee rest for at least two weeks. The ultimate goal is to make specialty coffee approachable, welcoming, and enjoyable for the drinker’s daily routine.
