San Ignacio Peru

San Ignacio Peru from Uncommon is a washed espresso from Cajamarca, produced by 223 female producers from Cosecha de Mujer. This gives the coffee a bright and accessible profile with notes of dark chocolate, orange, and molasses. The light-to-medium espresso roast keeps the sweetness rounded while allowing fresh citrus to shine through. In the cup, this is followed by a syrupy mouthfeel, medium acidity, and a long finish with cocoa, light caramel, and soft nutty notes. This release is sold as whole bean and appeared as a seasonal lot, so availability is limited.
