An exact opening date for Poppies Café has not been publicly recorded. In June 2024, the first reports about the opening appeared. De Buik van Amsterdam reported on June 7 that Poppies had opened shortly before. Later that month, a profile of Hotel Poppies and its associated all-day café followed.
The founders of the original café and their professional backgrounds are not publicly documented. In the project database of the municipality of Amsterdam, N. Donker, K. Keij, and H. Endstra are listed as the clients for the hotel project. DML Studio is mentioned as the architect. However, these details do not indicate that the clients were also the founders or operators of the café.

A specifically described product was an Ethiopian filter coffee from Sidama, produced by Daye Bensa. According to the communications, this coffee could be prepared using filter methods. Specific brewing equipment, such as a V60, AeroPress, Chemex, or cafetière, was not mentioned. Therefore, it cannot be determined which manual brewing methods were standardly available.

The situation changed in 2026. The café’s social account now describes the business as the former lobby café of Poppies. Reports from April and May 2026 state that Scramblicious has taken over the hospitality space in Hotel Poppies. Therefore, the described coffee activities refer to the earlier operation under Poppies Café and Very Tall Poppies, not necessarily to the current offering in the hotel.
