Ethiopia Sawana from Schot Coffee Roasters hails from Guji, Oromia. The beans are grown at high altitudes, resulting in bright, floral layers. The profile is elegant, featuring rosehip, bergamot, and iced tea, clean and precise. The processing is washed, carefully fermented, and slowly dried on raised beds.

This roast is intended for filter. Therefore, choose a V60, Kalita, or a gentle batch brew. Start with a light grind and adjust based on a clear drawdown time. Schot recommends using the coffee starting two weeks after the roast date, peaking around week three. Expect a transparent body, vibrant acidity, and a long, floral finish.
