Peru Carnaval from Schot Coffee Roasters comes from Callayuc in Cajamarca and is supported by four small-scale farmers. This washed coffee undergoes more than 48 hours of fermentation, creating extra fruity tension without losing its clear style. In the cup, you taste almond, red apple, and caramel, along with notes of plum, apple syrup, and salted caramel. This keeps the coffee accessible, yet layered and vibrant. Schot roasts this coffee separately for filter and espresso, ensuring each profile better aligns with the chosen brewing method. While there is no fixed recipe, the choice between the two roast profiles is deliberate and distinct.
