Mooleh Manay Excelsa

Mooleh Manay Excelsa from Shokunin showcases a different side of specialty coffee. This rare bean from Coorg in India underwent 84 hours of anaerobic fermentation and then dried slowly in a polyhouse. This results in a deep, layered cup with eucalyptus in the aroma, ripe pear as the sweet core, and vanilla and licorice in the long finish. Additionally, floral notes, nougat, and light bitters add extra tension. A classic filter or espresso recipe is missing, but according to the roaster, this coffee truly excels as a long black. Its character also remains beautifully intact in a flat white or cortado.
