Rum Cherry Rum from Sprout Coffee Roasters comes from Lalesa in Gedeb, Ethiopia. This anaerobic natural ferments for nine days in tanks and then dries slowly on raised beds. This results in a full-bodied cup with notes of cherry, peach, orange marmalade, and cola.
The roaster chooses an omni roast, making this coffee suitable for both filter and espresso. For espresso, Sprout recommends 19.7 grams in and 48 grams out in 29 to 31 seconds at 92 to 93 degrees. For filter, the roaster suggests 17 grams of coffee to 255 grams of water, divided over three pour phases.
