From Amsterdam Café to IJmuiden Roastery
Coffee & Coconuts started in September 2014 as a hospitality concept. The founders, Bas Beijer, Jasper van het Nederend, and Ruerd Akersloot, opened the doors in the former Ceintuur Theater in Amsterdam. Nowadays, the emphasis is strongly on roasting their own coffee. On February 28, 2024, the brand opened a brand-new roastery in IJmuiden. The company now serves its customers primarily through two main locations: the roastery at Halkade 23 in IJmuiden and the bustling café at Gustav Mahlerplein 20 in the Zuidas.
The Team and the Philosophy
Founder and owner Jasper van het Nederend works with an international and experienced team. Head roaster Daniel has gained no less than twenty years of coffee experience in Africa, Central America, and Southeast Asia. Valeria, an expert from Venezuela, started as a barista and has since become indispensable in roasting and cupping. Jezus, originally from Peru, practically combines the roles of delivery driver and roaster. Tim, from France, was also recently added to the roastery team.
The brand’s philosophy is highly accessible. They promise “specialty coffee for the common man”, delivering quality without pretension. To maximize sweetness and aroma, every coffee is given a specific, carefully designed roast profile on the Giesen machines.
Signature Coffees and Roasting Techniques
The current selection is surprisingly extensive for a Dutch roaster of this size, featuring eleven espresso and eleven filter options. A few specific coffees define the brand’s identity:
Ayu: The roastery’s very first coffee. This blend of beans from Brazil (60%), Colombia (20%), and Uganda (20%) was specifically developed for consistency. Baristas can effortlessly serve a hundred drinks per hour with this blend.
Five-O: For this blend, all components are roasted separately before being blended together.
Paz: This ‘natural Acaia’ is the brand’s absolute bestseller. It features a darker roast with a full body and distinct notes of chocolate.
Sol: This lighter roast is promoted as the favorite among professional baristas. Through a longer development time and additional airflow in the roaster, soft flavors of palm sugar and stone fruit are created.
Sakura: An exotic coffee from Calarcá in Colombia. Its striking flavor profile balances the aroma of a floral bouquet with sweet honey.
Direct Trade and Regenerative Agriculture
The company employs a direct-trade model and has visited farms in Bali and Brazil, among others, annually since 2019. Sustainability is a key priority; the brand positions itself with coffee based on agroforestry.
In Brazil, they work intensively with Adolfo Vieira Ferreira of Fazenda Passeio, the producer behind the successful Paz and Sol coffees. Another influential project is ‘Flora’, a collaboration with farmer Eduardo of Fazenda Pedra Preta. Here, Coffee & Coconuts serves as the exclusive European distributor for coffee from a regenerative agroforestry system that improves soil health and biodiversity.
Other sustainable initiatives include the Los Osos project in Colombia, aimed at protecting the habitat of the rare spectacled bear. Additionally, the roastery has purchased organic certified beans from the Guji region in Ethiopia for five consecutive years. The Colombian decaf is decaffeinated locally via a natural process using sugarcane.
Commercial Model and Market Position
The commercial model rests on several pillars: online retail, hospitality, and corporate wholesale via a B2B registration system. For online consumers, there are flexible subscriptions with a four-week cycle and free shipping. The ‘Roaster’s Choice’ is particularly popular—a rotating bundle of three 250-gram bags, always containing at least one filter and one espresso coffee.
The brand is increasing its visibility within the industry through targeted partnerships. In 2025, they became the official coffee partner of the BEAT Cycling Club. Additionally, The Coffeevine selected their sugarcane decaf for the July 2025 global box. Previously, in 2018, their beans were featured by the Hemro Group during the launch of professional Mahlkönig and Anfim grinders in Amsterdam.
Reporting and Transparency
While transparency and fair pricing are heavily emphasized in the direct-trade model, not all data is publicly accessible yet. Details such as exact roasting capacities, purchase volumes in tonnes, and detailed payment tables per farm are currently missing from the website. Furthermore, the brand does not yet publish a formal annual impact report or a CO2 dashboard. Nevertheless, the explicit mention of farmers and origin stories demonstrates that supply chain openness is a high priority.
