Produced at 1,580 meters on the Santa Ana volcano, La Independencia comes from the Salaverria family at Finca San Francisco. The light espresso roast beautifully balances the freshness of a natural process. Expect a jammy body with notes of black cherry, apricot, and rounded honey tones, finishing with a smooth aftertaste. Cherries are hand-picked, dried in layers, and undergo controlled fermentation at Beneficio Las Cruces. The variety is Red Tabi. Sustainability measures include Huisil manure, fair wages, and investments in education. Suitable for both espresso and filter methods, including V60, Chemex, and Aeropress. Available at Keen Coffee in 250g and 1kg bags, with shipping available Monday through Thursday.
