Nestor Lasso from Keen Coffee is a striking microlot from Huila, Colombia. This Bourbon Ají comes from Finca El Diviso and immediately demonstrates why Nestor Lasso is so highly regarded. Through natural processing with oxidation, anaerobic fermentation, and thermal shock, a clear and intense profile is created. In the cup, you will taste elderflower, lemongrass, and red grape. Additionally, the light roast allows plenty of room for floral tension, juicy sweetness, and an almost wine-like finish. For this release, Keen does not share a fixed recipe for V60 or espresso, ensuring that the character of the bean remains the central focus.
