This Indonesia Kalossi comes from the heart of Sulawesi, around Toraja and Kalosi. Altitudes between 1000 and 1800 meters ensure slow ripening and concentrated sweetness. De Ouwe Smidte opts for a washed process, resulting in clean, precise flavors and a clear aromatic line. A medium roast preserves the citrus and berry notes, while the cocoa remains round and sweet. The body is full, and the acidity is round and accessible. The result is a balanced cup that lets the terroir speak clearly.
