Guji Highlands is an organic 100 percent Arabica from the Guji zone in Ethiopia. The beans grow at 2,000 to 2,180 meters on fertile soils and are lightly roasted for a soft, fruity and aromatic cup. Flavor notes recall apricot, grapefruit, licorice and rock candy with a long, fresh finish. The estate uses careful natural processing with strict selection. Brewing advice, choose filter, cafetière or slow coffee; espresso is possible with the natural variant. Simon Levelt works with local farmers and invests in sustainable practices and knowledge sharing.
