History and Concept
Hummingbird Coffee Amsterdam opened on December 21, 2018, at Spuistraat 217 in the heart of Amsterdam. Agavni Jessaijan is cited in sources from that period as the founder and owner. She developed and financed the business as her second venture. Kees Dijkhuis was involved in the development and support of the project. Sources do not consistently describe their roles, so a joint status as co-founders is not definitively established.
Jessaijan had previously worked on creative concepts, communication, and consulting regarding organizational and cultural change. She was also the owner of the creative agency Heartcore-Lab. Before his role at Hummingbird, Dijkhuis owned the Amsterdam coffee bar Caffè il Momento.
The original concept revolved around coffee from multiple roasters. Each month, a different guest roaster was featured, alongside a few coffees selected by the baristas. The business presented this model as a way to explore different origins, processing methods, and flavor profiles. According to a business profile, there was no standard fixed menu. Staff would first engage customers in a conversation about their preferences and brewing methods.
On March 1, 2024, the business was transferred to a new owner. A notice from a hospitality broker named Kees Dijkhuis as the selling party but did not disclose the identity of the buyer. Consequently, based on the available information, it is not possible to determine who has owned the business since that date.
Coffee and Brewing
Since early 2021, Onyx Coffee Lab has been considered the permanent house roaster by Hummingbird. Both parties jointly developed the Onyx Hummingbird Blend. Hummingbird also describes itself as a reseller of Onyx Coffee Lab within the European Union. According to available information, the shop does not roast its own coffee but works with Onyx and various other roasters.
The guest roaster program features two or three coffees per month. In June 2026, SWERL was listed as a guest roaster. At that time, the webshop offered coffee from Onyx Coffee Lab, SWERL, and Nomad. This included blends and single-origin coffees from Brazil, Mexico, and Colombia. This selection may vary by period.
For espresso, the bar uses a Modbar system. Additionally, daily batch brew from a Moccamaster and manually brewed filter coffee using a V60 are documented. Historical descriptions mention espresso with the Onyx house blend, V60 filter, and batch brew as standard components of the preparation. The webshop also lists matcha products and a traditional chasen. A complete and current drink menu with prices is not available on the website.
Contact, activities, and interior
Personal contact has been a visible part of the concept since the opening. The conversation between the barista and the customer was intended to help in choosing a coffee. Offering coffee tastings before purchase was also mentioned in public communications. The monthly rotation of roasters aligned with this emphasis on explanation and discovery.
On June 19, 2019, a training for home baristas on filter coffee took place at Hummingbird. A current, recurring schedule of workshops, tastings, exhibitions, or other public activities is not documented. However, the mural at the back of the shop is known: Brazilian street artist L7matrix created a hummingbird there.
Sustainability and Suppliers
In 2019, Jessaijan stated that the business aimed to promote reusable cups, limit plastic use, and encourage customers to think about environmental impact. According to the same publication, the then-head barista Samya Vermeer lived a zero-waste lifestyle and influenced this approach.
From that same year, Sharp Sharp from Rotterdam and Petit Gateau from Amsterdam are documented as suppliers of pastries. Plant-based milk from Mylk was also used, and a switch to Minor Figures was planned. It is not confirmed whether these arrangements are still in effect.
Hummingbird states on its own website that Onyx Coffee Lab uses solar energy for roasting and publishes information about producers and paid prices. These are statements by Hummingbird about a supplier. Independently certified environmental standards or labels that apply directly to Hummingbird are not publicly documented.
Publications and recognition
The coffee bar has appeared in various guides and industry-focused publications. The Coffeevine wrote about the concept, the Modbar, suppliers, and plans for waste reduction in February 2019. Brian’s Coffee Spot published a visit report in April 2023 covering the house blend, guest roasters, and brewing methods. Your Little Black Book, The Way to Coffee, and Next Journey Ahead also included the shop in Amsterdam coffee guides. Formal industry awards or independently confirmed competition titles are not documented.
