Encore 2001 from Brazuca Coffee shows how modern Brazil can taste. This Catucaí from Fazenda Paraíso in Ibiraci combines natural aerobic fermentation with a light roast. As a result, you taste molasses, caramel, and vanilla, followed by a clear, soft acidity. For filter, the roaster recommends 90 to 93 degrees and a ratio of 1:15 to 1:18. For espresso, 20 grams of coffee, 89 to 91 degrees, a ratio of 1:2 to 1:2.5, and 28 to 33 seconds works well. This makes the coffee suitable for both a slow V60 and a modern espresso.
