The Rise of Brazuca Coffee
Brazilian entrepreneur Tiago Gawlinski, who moved to the Netherlands in 1990, founded Brazuca Coffee in Amsterdam in 2008. The company started as Casa Brazuca to share Brazilian culture, coffee, and hospitality with the Dutch public. They introduced innovative products such as pão de queijo and açaí na tigela to the local market. Later, the concept grew into a full-fledged coffee roastery with various locations in Amsterdam, Rotterdam, and São Paulo. The brand name reflects a strong pride in the Brazilian lifestyle. The private company has between two and ten employees. Alongside founder and head roaster Tiago, the public team consists of Amanda Santos de Castro, Daniele Santos, and Bruno Silva.
Philosophy and Roasting Process
Brazuca focuses entirely on 100 percent Brazilian specialty coffee. The team roasts the beans weekly in small batches at their Amsterdam location on the Gyroscoopweg. The roast profiles are practical and clearly categorized. Espresso beans generally receive a medium to dark roast, while the team roasts filter coffee medium to light. Customers receive highly precise brewing recipes with their order.
For optimal preparation, Brazuca recommends the following parameters:
For espresso: 20 grams of ground coffee, an extraction of 28 to 33 seconds, and a water temperature of 89 to 91 degrees Celsius with a ratio of 1:2 to 1:2.5.
For pour-over: a water temperature of 90 to 93 degrees Celsius with a ratio of 1:15 to 1:18.
Direct Sourcing and Brazilian Farmers
The brand sources directly from Brazilian farmers, placing a strong emphasis on transparency and fair pricing. A key partner is Eldorado Specialty Coffees, a coffee producer that has already won six quality awards. Producer Jean Vilhena Faleiros supplies various microlots, including the Gatekeeper Geisha Natural and the floral Morning Sun Yellow Bourbon. Another exceptional coffee is the Brasil Fazenda Sertão 100 Years Reserva. Here, Francisco Isidro Pereira grows coffee from Red Bourbon trees that are over a hundred years old. These historic trees grow in Minas Gerais at an altitude of 1,100 to 1,450 meters above sea level.
Assortment and flavor profiles
The current assortment includes espresso beans, filter coffee, tasting packs, and the special World Origins collection. The Paulista Blend is a medium-dark roast with characteristic notes of almond, chocolate, and red berries. The Mistura Fina Seasonal Blend is a limited-edition espresso featuring striking flavors of chocolate, roasted chestnut, and red apple. For lovers of unique processing methods, there is the Morning Sun Yellow Bourbon microlot. These beans undergo a sixty-hour anaerobic fermentation, resulting in notes of passion fruit, mango, and florals. Additionally, Brazuca offers a chemical-free decaf option, produced via the well-known Swiss Water method. Under the World Origins banner, they sell limited lots from other countries with an SCA score of 86 and above. An example of this is the El Salvador Finca San José, a Classic Honey processed Red Bourbon from the Fundación Agape.
