For filter, the roaster recommends 90 to 93 degrees and a ratio of 1:15 to 1:18. For espresso, 89 to 91 degrees works well, with 20 grams of coffee, a ratio of 1:2 to 1:2.5, and an extraction time of 28 to 33 seconds.
