Convection roasting
Convection roasting uses a stream of hot air to heat the beans rather than direct contact with the hot drum. This allows heat to penetrate faster and more evenly, which can produce a vibrant flavor profile, especially with lighter roasts. The technique is popular among smaller roasteries that aim for precise temperature control and clarity in their coffee.
