Wet-hulled
Wet-hulled, also called Giling Basah, is typical of Sumatra and other parts of Indonesia. The beans are partially dried and then pulped at a higher moisture level, which causes them to develop a characteristic earthy and spicy flavor. The result is a heavy mouthfeel with low acidity. This method is valued for its unique, intense profile.
